Easy Two-Step Breakfast Quesadilla


This isn’t exactly a recipe, because it is so easy, but it is a great idea for an easy and healthy breakfast.


  • 1 small tortilla

  • 2 eggs

  • chipotle tabasco

  • salsa of your choosing

  • avocado or guacamole, fresh or pre-made. (The guac from Trader Joe’s is really good!)

  • cheddar cheese optional


  • Mix 2 eggs in a bowl and then pour into a small/medium size frying pan on medium heat.

  • Let the eggs cook as if you were making an omelet. When the eggs are firm enough, flip over. (It is ok if they don’t keep the shape. You can even scramble if that is easier for you.)

  • In a separate frying pan, grease bottom with olive oil and lay tortilla flat to begin browning.

  • When eggs are ready, transfer them to one side of the tortilla.

  • Add cheese, hot sauce, or any other filling you would like an fold tortilla in half.

  • Flip quesadilla to heat and brown opposite side.

  • Enjoy with some salsa, guacamole, or avocado slices!

I am still going strong on breaking my Starbucks morning addiction and I will be making this breakfast quesadilla often, it is so good!
