Pesto Salad Pizza

Salad pizza? Yeah girl, and you are going to love it! For real, this is up there with one of my favorite recipes so far! It is perfect for family pizza night, a potluck with friends, or any other kind of gathering with food involved. It is as simple as it seems…. we are going to make our basil pesto first, then our pizza, our salad, and then we are going to put it all together for a party your taste buds will thank you for.


BASIL PESTO

Ingredients:

  • 2/3 cup of pine nuts

  • 4 cloves of garlic

  • 2 cups chopped fresh basil leaves

  • 2/3 cup of water

  • 2 Tbsp. lemon juice

Directions:

Put all of the ingredients into a food processor and blend until smooth, thinning with additional water if needed.

PIZZA

Ingredients:

  • Pizza crust of your choosing, I used Trader Giotto’s Pizza Crust from Trader Joe’s.

  • Shredded mozzarella cheese

  • Pizza toppings of choice. I did mushrooms and olive and on my side and Bradford just did olives.

  • Basil pesto

  • Olive oil

  • Grated parmesan cheese

  • Garlic powder

Directions:

  • Preheat the oven to 450.

  • Brush olive oil onto both sides of the pizza crust.

  • Spread a thin layer of basil pesto to the top of your pizza crust.

  • Top with Shredded Mozzarella cheese.

  • Add your pizza toppings.

  • Sprinkle with garlic powder and parmesan cheese.

  • Bake until cheese starts to brown.


SALAD TOPPER

Ingredients:

  • 1 cup of finely chopped salad mix. I use Champs Elysees from Trader Joe’s.

  • 1/4 cup finely chopped shredded carrots

  • 1/4 cup feta cheese

  • 1/4 cup finely chopped bell pepper

  • A few chopped red onions

  • 1 Tbsp. Sunflower seeds and or slivered almonds

  • Crushed croutons

  • Balsamic vinaigrette dressing or you can toss in red wine vinegar

Directions:

  • Toss all ingredients above in a medium size salad bowl and spread over the top of your pizza crust!

  • Cut with a pizza cutter and enjoy.

I had plenty of basil pesto left over and I plan to use it this week for some roasted potatoes or zoodles. Stay tuned and have an awesome pizza night!
