Quick and Easy Taco Soup

What you’ll need:

  • 1 large can of tomato sauce 

  • 2 packets of taco seasoning 

  • 1 large yellow onion 

  • 1 packet of beefless beef from Trader Joes 

  • 2 quarts veggie stock 

  • 2 cans pinto beans 

  • 1 can black beans 

  • 1 small can of corn 

  • 1 cup shredded carrots 

  • 1 cup chopped bell peppers (red, orange, yellow) 

  • 1 small can green chilies 

  • 1tbsp chili powder  

  • ½ tbsp cumin  

 Directions:

In a large soup pot, sauté chopped onions in about 2 tbsp olive oil. 

 

Add bell peppers when onions start to brown and continue sautéing until all are browned. 

 

Add Beefless beef and mix well. 

 

Add can of tomato sauce, carrots, green chilies, corn, taco seasoning packets, chili powder, and cumin and stir. 

 

Add two cartons of veggie broth, stir, and let simmer for 10 min; Stirring often. 

 

Rinse and drain the three cans of beans and add to the soup.  

 

Stir, and use a hand mixer to puree some of the soup.  We still like chunks of beans and veggies in here but find that when we puree some of the soup it makes it much more flavorful and all-around thicker consistency. You will learn what texture you prefer and if you don’t have a mixer, don’t worry you can still eat this soup as is!
