Chicken-less Chicken Noodle Soup

What you’ll need:

  • ½ bag yolk noodles 

  • 2 quarts chicken broth  

  • 1 cup chopped celery  

  • 1 cup chopped carrots 

  • 1 yellow onion  

  • 2 bay leaves 

  • 2-3 tbsp chicken bouillon powder 

  • 1 tsp sea salt 

  • Pepper to taste 

  • ½ tsp thyme

Directions:

In a large soup pot, sauté chopped onions in olive oil until brown. 

 

Add carrots, celery, and chicken bouillon powder and stir. 

 

Add 2 cartons of veggie broth, salt, pepper, thyme, and bay leaves, and bring to a boil. 

 

Add ½ bag of yolk noodles and continue boiling and stirring occasionally until noodles are soft. About 5-8 min, 

 

Remove from heat and let sit for about 10 minutes and serve.
